Spring is just around the corner and brings with it beautiful vegetables such as green asparagus.
It is one of my favorite vegetables, both for its fine taste but also because it is very seasonal.
To enhance this beautiful vegetable, I decided to combine it with a traditional Hollandaise sauce but obviously in a vegetable version.
So, go try this recipe!
Ingrédients (for 4 people)
16 green asparagus
20g melted margarine
5g of potato starch
120ml unsweetened soy milk
60ml water
1 tsp lemon juice
1 tsp mustard
A pinch of kala namak salt
A pinch of granulated garlic
2 tsp nutritional yeast
Method
Prepare the Hollandaise sauce by mixing all the ingredients together then heating for a few minutes in a saucepan until the mixture has thickened.
For the asparagus, cut off the more fibrous ends by 2-3 cm. A good way is to take the end of the asparagus in your hands and bend it to break it. Where it breaks is that it is less fibrous.
In a pan with a dab of margarine, brown the asparagus for a few minutes, browning them on each side. Season with a little pepper and salt.
Serve the grilled asparagus with a little warm hollandaise sauce on top and enjoy.
