Indian vegetable tofu patties

For 4 people (i.e. 8 patties)

Ingredients


For the patties :

  • 300g of tofu

  • 100g of leeks

  • 75g carrots

  • 75g celeriac

  • 40g flour

  • 2 tbsp cornstarch

  • 2 tbsp unsweetened vegetable milk

  • 3 tsp curry powder

  • Salt & pepper

For the sauce :

  • 150g silken tofu

  • 5-6 canned pineapple rings

  • 1 tbsp cider vinegar

  • 1 tsp salt

  • 1 tsp curry powder

  • 1 tsp coriander powder

  • 1 tsp turmeric


Method


For the patties:

  1. Clean and finely chop the leek. Fry them in an oiled frying pan with a little salt.

  2. Peel and grate the carrots and celeriac.

  3. Grate the tofu and place it in a bowl.

  4. Add the grated carrot and celery, leeks, flour, cornstarch and curry powder. Mix and adjust the texture with the vegetable milk. Check the seasoning.

  5. Form patties with your hands

  6. Cook them in a pan over high heat for a few minutes on each side.


For the sauce:

In a bowl, combine all the ingredients and blend to obtain a smooth sauce. Check the seasoning.


Serve the patties hot with the sauce.
